The Domaine des Moines is located in Villeneuve. On the shores of Lake Léman some 3km from Chillon Château, its low altitude (390m) and the reverberations from the lake create an environment conducive to wine cultivation.
The estate (5 ha) is planted with 30% goblet vines (12'000 feet/ha) with the rest made up of guyot vines (8'000 feet/ha). The high density plantations require significantly more work to cultivate but yield an exceptional quality of grape. The Domaine des Moines tends its vines to IP Swiss standards, which are some of the strictest in the agricultural world. (www.vitiplus.ch). They serve to put the emphasis on auxiliaries and to only treat the vines as a last resort.
If 90% of the quality is due to the vine itself, the winemaker also plays an important role in getting the most out of each vintage. The vinification process marries tradition with the contemporary, allowing the terroir to do all the talking. The Domaine des Moines produces wines from old vines on lees, subtly releasing their full potential. More besides, certain reds are aged in barrels (for up to 30 months) so as to structure the wine for long term cellaring. It’s a method of wine making that has been successfully practised since 1985.
